CHICKEN SKEWERS IN AN ONION MARINADE
         WITH ZUCCHINI & GREEN BELL PEPPERS
    SERVES 12 - 14 (Depends on how YOU make them) This             recipe can be made the night before or the morning of.

Ingredients needed:
• Bamboo Skewers / Wooden Skewers
• 2 pounds —boneless, skinless chicken (can be breasts or thighs), cut into cubes / 1” chunks
• 1 medium —Zucchini cut into chunks
• 1 Small —Green bell pepper cut into chunks

Onion marinade:
• 1 medium —white onion, roughly chopped
• 1 cup —fresh parsley, roughly chopped
• Juice of 2 Lemons / 3 Tablespoons of lemon juice

***1/4 cup of Olive oil / Coconut oil
• 3 —Garlic cloves
• 1 Tablespoon —Pink Himalayan Salt

Instructions:

  1. Combine the following items into a blender/ food processor: onions, parsley, lemon juice, salt, olive oil and garlic.
  2. Blend until a smooth pureé. The consistency you are wanting is as thick as a milk shake. (add water if needed).
  3. Transfer chicken to a bowl / zip lock bag. Pour the marinade over the chicken, seal and shake vigorously.
  4. Allow the chicken to marinate 2 to 4 hours or overnight. The longer the better.
  5. When ready to broil. Add the chicken and veggies to the skewers. Alternating protein and veggies.
  6. Broil on high 20 minutes or until browned.
  7. Turn over and cooke another 15 to 20 minutes or until Browned.
