                          Makes 4 Servings 


  • 3 --Medium, Zucchini's
  • 8 ounces --Cream Cheese, softened
  • 1/2 cup --Marinated Artichoke Hearts
  • 1 cup --Fresh / Frozen Spinach
  • 1 cup --Shredded Mozzarella Cheese
  • 1/2 cup --Shredded Parmesan Cheese
  • 1 teaspoon --minced garlic
  • 1/4 teaspoon --cayenne pepper
  • 1/4 teaspoon --black pepper
  • 1/4 teaspoon --pink himalayan salt
  • 6 slices --un-cured bacon
  • ***OR***
  • 1/2 pound --Un-cased mild Italian Sausage


  1. Prepare the Cheese Mixture and set aside.
  2. Pre-heat oven to 350*F
  3. Remove the seedy centers with either a spoon or an ice cream scooper. The scooper works the best for me!
  4. Then transfer these onto a parchment lined baking sheet or dish.
  5. ***If using Sausage***
    1. Cook the un-cased sausage and drain the oils.
    2. Add sausage to the cheese mixture.
    3. Spoon cheese mixture onto Zucchini’s
  6. ***If using Bacon***
    1. Spoon cheese mixture onto Zucchini’s
    2. Either wrap a slice of bacon around the zucchini or just place it on top. Both work just fine.
  7. Now you can bake these at 350*F for 25 to 30 minutes or until the zucchini is tender and the tops are browned.
