ROASTED COD WITH BELL PEPPERS & CAPERS
(Serves 8)

Ingredients:

  • 2 Pounds —Cod, unsalted and skinless
  • 2 Medium —red bell peppers
  • 1 Medium —orange bell pepper
  • 1 Medium —yellow bell pepper
  • 1 Small —red onion
  • 6 Tbsp —olive oil
  • Pink Himalayan Salt & Black pepper to your taste
  • 8 —garlic cloves, minced or roughly chopped
  • 4 Tbsp —organic red wine vinegar
  • 1/4 Cup —fresh parsley, stems removed and roughly chopped
  • 2 Tbsp —drained capers
  • 1 teaspoon —oregano
  • 1/2 teaspoon —cayenne pepper (optional)



Instructions:

  1. Move oven rack to the top most position. Turn on broiler.
  2. Seed bell peppers and cut into halves, lengthwise.
  3. Lay bell peppers onto a cookie sheet.
  4. Drizzle with olive oil and sprinkle with salt and pepper
  5. Toss to coat peppers and place skin side down on sheet.
  6. Broil for 10 minutes or until blackened and turn.
  7. Broil for another 10 minutes or until blackened.
  8. Transfer the peppers with all juices to a bowl and cover with plastic wrap.
  9. Let it sit for 20 minutes to steam and cool.
  10. Meanwhile….Move oven rack to center of oven and preheat oven to 300*F.
  11. Check peppers and if cool to touch, begin to peel the skin.
  12. Once skin is off tear into strips and transfer to a shallow baking dish with all juices.
  13. Nestle the Cod onto the bell peppers.
  14. Drizzle about 2 Tablespoons of olive oil over cod.
  15. Now add: onions, garlic, vinegar, oregano, cayenne, parsley and capers.     ***TIP*** In retrospect: I would combine these ingredients into a bowl and mix them well, then pour them over the fish. This will ensure an even coating of the seasoning.
  16. Sprinkle with salt and pepper to your taste.
  17. Roast on center rack until flesh is opaque throughout and flakes easily when pressed with a fork. Approximately 25 to 35 minutes.  Check at 25 minutes.
  18. Let rest for 10 minutes then serve!
